CULTIVATION METHOD
Natural tending to organic
Manual harvesting with sorting of the grapes and optimisation of the choice of date by plot monitoring of maturity.
Vinification & Maturing
Long and gentle pneumatic pressing, 24 hours settling and settling of the sludge.
Alcoholic fermentation 85 % in stainless steel tanks, 25 % in 220 l barrels for 6 months.
Ageing: after 12 to 18 months in stainless steel tanks, the wine is prepared for bottling.
Homeopathic fining and gentle filtration is carried out if necessary.

The second most grown grape of all is Chardonnay. Coming from Bourgogne in France Chardonnay has see a world-wide success and can be found in nearly all climate region where you can grow wine. From Denmark down to South Africa Chardonnay is a strong and versatile plant and fruit. Best grown on chalk and matured in brand-new wooden barrels.
Working with the juice after the harvest is where a wine-grower can show his/her winemaking skills. It is like a signature of the overall philosophy of each vinery because the grape-juice needs a lot of attention and care in the process of turning grape juice to wine. Balancing the natural and biological fermentation is key for a creamy and soft wine but is the most challenging with Chardonnay.
